Plex won't see subdirectories on network drive

Server Version#: 1.32.5.7210
Player Version#: 1.73.1.3905-c1a43e18

What appears to be happening:
Plex is not able to see/scan subdirectories on a network drive*.

This installation has been working flawlessly for 2+ years.
I have Windows 10 installed on a VirtualBox VM. The media is on a drive on the host computer and is “shared” using VirtualBox’s “Shared Folders” functionality. It appears on the VM as a network drive. I am able to access the drive and all the files without any issues within the VM.

After whatever happened, all of my television, all of my music, and some of my movies disappeared from Plex. The only thing I can see that is different is that when I go to add the folder for the library on the D: drive, it never populates the folder/subfolder names like it does when I choose the C: drive. I have viewed the logs and this is what I see when it attempts to scan the TV Shows:

I believe this happened after a server update, but I’ve been messing with it long enough that I don’t remember a specific event.

Any ideas of what could be causing this?
