I am running a fresh install of Ubuntu 18.04. Plexamp runs, but the tray icon is missing. The XDG_CURRENT_DESKTOP=Unity workaround has no effect.
Perhaps this comment should be looked into by the devs: Plexamp App Menu not showing on Linux/Ubuntu

Ubuntu 18.04 I believe uses gnome now and not unity. Only guessing but you might need to install the top icons extension for gnome shell to get sys try icons to load.
BTW… Not really a plex issue, gnome decided to remove the old sys tray a number of releases ago but the extension should be able to add it.
EDIT… I would also recommend installing top icons directly from https://github.com/phocean/TopIcons-plus and not from https://extensions.gnome.org/extension/1031/topicons. I’m on fedora 31 (with gnome 3.34) and while I don’t use Plexamp I do use some other legacy applications which use the old sys tray implementation (dropbox, slack) and top icons works perfectly when installed from github to show them on the menu bar.
Thanks for the tips. I also run Slack and its icon appears without any third party software.
