Take a look at the “Plex Media Scanner Analysis.5 file” - this is where I noticed some warnings. Since they’re from a folder I recently created, I just removed that entire library. They’re videos of my kid from my phone so I don’t want to upload them here. I don’t really need them in Plex so everything is good on my end. If you want the file for the purpose of troubleshooting on your end, just let me know how I can send some to you privately

I had a look - yes we have some warnings on one video file IMG_3095.mov
It is not obvious that these warnings would also lead to the repeated log entries that led to the crash
If you can try a test library with just that movie and see if it leads to the repeated logging of this error and eventual crash
