The video quality has suddenly deteriorated on my setup - Plex Server on a Macbook Air streaming content on the Macbook to an Apple TV. I haven’t changed any settings. I noticed there was an update to the Apple TV app which I installed but that didn’t help. I have restarted everything and checked my Wifi set up. All other streaming services are working fine.
