Possible to convert VOBSUB (IDX/SUB) to Text (SRT) automatically or before playing

I use multiple Plex servers (Windows and Pi on Raspbian) in my home and there is one huge annoyance I come across.
I play using the Samsung Plex client on multiple Samsung TV’s models ranging from 2017 to 2020.

My problem is I dislike VOBsubs, but some media I have only comes with VOBSUB included in the mkv and can’t find a properly synced SRT.

Vobsub always forces a transcode on Samsung TV’s as they can’t handle that format, sometimes gives issues like subs appearing to late or disappearing quickly, and most importantly, the transcode ruins audio volume for me, which is odd, if I disable subttitles or use SRT, the audio is MUCH louder and better than when I have a transcode, even if my TV natively handles the format ( AC3 and EAC3). VOBSUB often renders in the video at wider than 16:9 while SRT properly uses the un-used black space. Finally SRT (font) looks much better, VOBsub always looks low resolution, jaggered, has rubbish fonts, and looks aliased. While SRT looks sharp (and also has support for multiple color/locations these days).

Is there a plugin that can use OCR to convert VOBsub tracks in MKV containers (that also contain a h264 of 265 video with ac3/eac3 audio) to Text based subs to prevent transcode and to make it look better? I don’t mind a few OCR mistakes, much less annoying than a poor font/sub for 3 hours long.

Thanks, this seems to do the job manually from the pc/server, but is there a way to do this automatically or at least from a Tizen/Samsung Plex client from your tv/remote directly?

So I don’t have to run a desktop app manually but instead do it via the plex UI from bed/couch.
