Is there a way to tell Plex to record a show if it ever shows up in the channel guide even if it isn’t in there now. It isn’t that different than the record all episodes feature so I’m not sure why it doesn’t exist unless I’m missing something.

No, something like that is not possible.
Yes, for something as complicated as “key word” scheduling, you either need to use whatever free software came with your tuner or, failing that, if you use Window,s you can use NextPVR, which happens to be free. It has a number of ways of specifying scheduling rules such as looking for program title that contain a given phrase.
I gave up on Plex DVR a long time ago because of its unreliability and the extreme deficiencies of it scheduling abilities. Now, programs always record when I want them to I never need to fight with the software to get a recording to schedule (sports and shows like SNL were always problematic with Plex).
