While using my plex player on Samsung Q70A tv, the sound cuts out at random. It seems to be related to the audio Codec EAC3. Not sure it is this but the audio stops while the video continues. I have seen some people say it is an issue with DTS but I am not seeing that.
Have you tried downgrading the Plex server version to 2.4 and see if it resolves the issue?

General consensus is to temporarily downgrade the server to 1.24.5.5173 as a workaround, while we wait for a fix from the Plex devs.
Another way to help test would be to force transcoding on 1.25.7.5604, by disabling DirectPlay and DirectStream. This will force the server to transcode the audio, and if it still cuts out, it may be unrelated.

I have Plex version 1.25.8.5663 on my Windows server and the latest version of Plex on my Samsung GQ65Q75T.
Unfortunately, the sound after about 1-3min. interrupted. The picture continues without problems.
It doesn’t matter what the content is (1080p / 2160p).
If I disable “direct stream” in the settings of the Plex app on the TV, the server re-transcodes the movie and playback runs without problems.
While this is a “small fix”, it’s not a definitive solution for me.
All other Clinds (Amazon 4K Cube, iPhone, iPad) work without problems.
