Second Plex Media Server not detected or available in dropdown

So I’ve built a Windows 11 MiniPC that I’m going to use as the driving engine behind my large Plex install, and have cloned and reorganized my media into directories on a direct-access storage device that’s attached to the unit. I’ve deliberately reorganized and reordered that information, so I don’t simply want to clone the install from my old server – but I also don’t want my family to lose access to the existing Plex server during the migration.

All attempts to install Plex Media Server on the new machine, however, only APPEAR to work; the application installs and starts, and I appear to get a new machine token in the registry; connecting to the server for the first time via “Open Plex” gives me a user token in the registry as well. But after logging in, my second server is NEVER visible on the left-side menu, even though it shows up in the Devices list in Settings; attempts to go to Setup by manually entering the server token and using the machine’s IP address tell me that I’m not authorized to connect to the machine (rather than just giving me a 404, which suggests that I’m using a valid machine ID), so I think I’m getting some kind of token registration issue.

How do I troubleshoot this? Or, barring that, what’s the best way to just blow away the old server and tell Plex to start over, as if I were setting up something brand-new?
