Funny that it shows also 3 Servers. I guess this is from previous installations.
Now I have stopped the Plex Server first and did the uninstall! After several 10 minutes the system now shows uninstalled of Plex. Just performing the re-start re-boot!
Once I am back home I will check with SSH if the Folder Plex media Server in /share/cachedev_data1/.qpkg still exist. If yes I will delete it manually before installing again.
Is there in any other folder any PLex files which I can remove manually before re-installing?
One more question to the MP3 library.
I have a Folder with Artists and then from 0-Z Folders with all Artists respective inside.
If I shall only put 300 at a time, I would need to give a all folders seperatly into the library. I.e. /share/Music/Artists/A another folder with /share/Music/Artists/B etc. Would that be a problem to have 27 folders for ther Music library? Or better to do it in once and to wait for 1 week that Plex has all Metadata finished?

Using ‘index letter’ folders should be no problem if the folder structure underneath is following

Now I have re-installed Plex and added TV-Shows and Movies. The TV-Shows so far are looking good. With the MOvies I have the same problem again. German Poster but English Movie Name. Please see XML File below.
With which software did you copy the XML?
You have included the URL, which contained your token (which is almost as good as your Plex password).
Do you have the OMDB agent installed?

How to get rid of the multiple Servers from previous Installation? See Picture!
Same appears in the Android app on my mobile.

Make sure to only delete the old servers.
(You might wanna temporarily rename your current server, so you can distinguish it from the old entries.)
The Android app requires signing out and back in to the plex account.

And there are the problems again. After reaching Index C for MP3s the Plex Server again does some funny things. When I wanted to add the D I couldnt select the folder from here
I had to enter it manually to have the same folder tree as previous. But before I could select it.
Also the agent selection is gone as you can see above. No chance to select between the extended Plex Premium Agent and the normal, simple last.fm Agent.
I dont know what else I can do that make Plex run properly again. 
I can’t help with the rest but I can for this. You need to pick it when you create the library. We don’t support changing music agents.
In the screenshot, I see you selected HDA_ROOT in the left column
You should when you click on the browse button be able to select root on the left column, and then in the right column, the folder named share should be avail
