Since no answer from Plex Team, I’m moving to Emby.

Yepp, same here!
Brand new installation of Ubuntu and only Plex, nothing else.
Stop and restart works for a few minutes, then back to no subtitles again.
Same problem here, updated Plex running on a raspberry 4 and Samsung TV client
