How do I turn off subtitles system wide?
In your account settings https://app.plex.tv/desktop/#!/settings/account under Audio & Subtitle settings for it to not enable them automatically for you.
If particular item’s subtitles had been enabled manually that manual selection will stick.
Thanks, but doesn’t seem to stick on the Apple TV
If you are looking at a details page on Apple TV when you changed the account setting from link above you may have to leave that items screen and come back to it. I just checked a few on mine after disabling the setting

The summary screen for a movie ( with summary, cast, etc) where it shows if a subtitle is enabled
You can check the language settings of the server instead of account. They are below the transcoder settings
I’m not concerned about the language just default subtitles to OFF otherwise I need to go into each file and remove the subs with MKV
There are subtitle settings there as well similar to the account ones just just at server level. Those are generally defaulted to off because most use the account settings.
To be clear. there is no system wide “turn off subtitles” toggle. The setting only stops it from automatically selecting one. it should revert to all off since when auto select disabled except if ever manually done on an item then subtitles will stick to whatever for that item.
