Is there anyway to get plex server to scrape my files to what I have, and not what plex thinks I have ?
I use Tiny Media Manager to scrape and name my files, it pulls all the meta data and related files. Then Plex completely ignores it and totally buggers it all up, either with the wrong artwork (which is in the directory) or the release date.
Surely there is a way ?
No Plex cannot use whatever way that pulls metadata if that is not a way Plex understands. https://support.plex.tv/articles/#cat-your-media

i don’t know what you mean by .ext metadata. Save what that is loaded where?
