Running Plex on Nvidea Shield.
I followed the menu directions to move Plex to my usb attached drive. I select the proper drive on the menu and it then says it is moving Plex.
It completes the task but when I go into ‘Storage and Reset’ and look, it still shows Plex on the internal shared storage NOT the usb drive.
Any help would be appreciated.

“Storage and Reset” isn’t where the indication of plex metadata being used on the external drive, that’s in the Plex Settings, where you selected and told the system to move the data. If it says the data is being sourced from the external drive there, then it is.
You can also look in Xplorer or other file browser app, and check the external drive, which will have a filesystem tree under Android/data/com.plexapp.mediaserver.smb containing the migrated data.
