After upgrading to DSM 7, my Plex server stopped discovering new files in the Media folder. I have tried to uninstall completely to start again, but even when I clink con “Erase all data…”, when I install it again, I end up with the same User I was having and also doesn´t run the initial configuration, to indicate the Media folders again.
I would like to know how can I completely remove the PLex Media Server from my Synology NAS so I can start from scratch.
Uninstalling with the Erase All Data option is the way to completely start over.
A suggestion: Let’s try to find out what is going wrong before just uninstalling/re-installing. There could be several reasons Plex is not discovering your new media and re-installing will not necessarily resolve the problem.
First, check file permissions. Plex Media Server needs at least read-only access to the locations where your media is located.
Note that with DSM 7 the username changed from Plex to PlexMediaServer. Also, PlexMediaServer is a System Internal User, not a regular user, so you will not see it listed in Control Panel → User & Group.
Set the file permissions even if they initially show OK. Synology sometimes loses the information (rare, but can happen).
What version of Plex Media Server is currently installed? This is visible in the Synology Package Center. Click on the Plex icon or on the name “Plex Media Server.” Do not click on “Open.”

Since you completely removed & re-installed Plex Media Server, it will be in an unclaimed state.
To claim the server, use a incognito/private browser window pointed directly at the NAS: http://syno_ip_address:32400/web.
You must be on the same network as the Synology NAS. No remote connections.
Do not click on the “Open” button in Package Center, do not use Synology Quick Connect, do not use a fully qualified domain name. Those methods will fail.
The incognito/private window bypasses cookie cutters, adblockers, etc.
If you are able to claim the server, you can proceed with configuring your libraries.

Just for completing the Info, I have a Snology DS220+ and the Plex Media Server version installed is 1.21.0-3744. The server is indicating that I have to install a newer version, so I will do it now that I see it working.
Definitely update when you get the chance. 1.21.0-3744 was a beta release for DSM 7 compatibility. There have been several updates since.
Download the current Intel 64-bit version from plex.tv (link at bottom of page) and perform a manual installation with Package Center (click the Manual Install button in Package Center). The installation will create a new shared folder, PlexMediaServer. It is the DSM 7 equivalent of the Plex shared folder under DSM 6.
