It was working fine yesterday but after the server update, all my 4k files are downgraded to 720p through remote playing Client.
Why?

You probably already checked your Playback settings, so I’ll continue with the next step;
In your Player of trust (e.g. Plex Web), go to settings > category Plex Web > Quality and select your preferred quality, probably Maximum.

I did it was fine and never changed.
I don’t know what went wrong all of a sudden
Only conclusion is the server update to windows 10 media server
Can you reproduce that playback situation and check out the Now Playing
information on the dashboard in Plex Web?
Key questions are:
- is the playback showing as remote or indirect?
indirect indicates your client is not directly communicating with the server but all traffic is going through a relay of Plex; this usually happens if there’s something wrong with your remote access configuration - are the streams being direct played or transcoded?
transcoding 4K material can be too much for many servers and result in Plex downscaling the quality to match what the CPU can transcode on-the-fly
Now I am getting this error
Could not direct play because: app cannot direct play this item. No direct play video profile exists for protocol http, with container mov, and video codec he can. Could not transcode because: not enough cpu for conversion for this item
What gives
So when i go to debug menu and restore defaults.
i go to quality menu and its automatically showing 2mbps 720p
Why?
Well as i sit on my PC and tried to play a movie through a browser, it doesnt even work anymore.

OMG
The folder is located on my Pc internal HDD, all of the 4k movies are giving this error (and the folder contains nothing but 4K files)
Everything was fine for months

And to answer your question it plays from Local.
The streams were transcoded yesterday
Today they dont even play neither on my apple tv or my local PC that contains the files
Really?
Sounds like your remote connection is not properly working and using an indirect / relayed connection instead. Those are using a limited bandwidth

Thanks but using Chrome browser shows under settings and quality set at 2mbs 720p. I tried several times to switch to Maximum, doesn’t save.
Still keeps giving me errors
