I may not need to follow your advice there as earlier I was inspecting my Synology DSM and realised that a.) PMS had stopped itself running for some unknown reason and b.) I can’t get it to run. (“Failed to run the package service”)
I am thinking that this might be at the root of my problems. I have contacted Synology Tech Support and I will see what they have to say.
I have worked my way back, mostly. I managed to re-install PMS on DSM, but using app.plex.tv leads me back to my original problem, “DiskStation is currently unavailable”. I will go through the help page tomorrow, although my head is a bit scrambled at the moment with all!
At least I managed to get PMS working again on the NAS.
I also followed the “Uninstalling PMS - Completely start over” instructions, to no avail. I am going to log out of everything and see if that makes a difference when I log back in.

I have managed (somehow) to get to the situation of being signed into PMS on the NAS, but I am unable to see any of my media. I signed out, but when I signed back in on my account,

It looks like you didn’t really uninstall the Plex Media Server to start over (=incl. deleting the data directory). Your server was mostly busy to update its database data model (applying all model updates since the previously installed PMS 1.18.5).
Did you really perform all 4 steps of the uninstall?
The server is still showing lots of networking errors. There’s local connections on the server itself getting rejected.
There’s also some errors that connections fail due to a bad certificate – did you at any point install a custom/own certificate on your old setup?

Is it a good idea/the best idea to connect a NAS directly to one’s computer, so that wireless connections don’t factor into things?
No I didn’t install a certificate on the old setup.
The only thing I have done recently (last weekend) is to install my new NAS, which I’ve been waiting to go. It was installed fine, with no errors from the NAS side of things.
One thing I realised is that on my login in plex.tv , I have 2 servers, one ‘Diskstation’ (the old one) and ‘NAS’ (the new one.) I presume I need to delete one of these.
No need to delete them from the list of authorized devices – unless you no longer want to use it. Technically… deleting it from the list of authorized devices will sign that server out of your account – it won’t actually delete the server itself.
Great. I have a question: when I try to add a library, say Movies, I go through the steps on this page https://support.plex.tv/articles/200288926-creating-libraries/ but when I come to the step of actually connecting to the content of my NAS, (Adding a folder), I can’t drill down deeper than /volume1/Media. As all along, my media is present and correct on my NAS. I’m sure that when creating libraries originally, that I could see my actual Movies folder.

That happens if the Synology user account used by Plex does not have sufficient permissions to see your media.
It worked! Things are mostly back at last - the permissions thing made the difference. Thank you so much for your assistance.
There are still a few wonky things, like 2 servers called ‘NAS’ showing p on my iPad, but I mostly watch things from the TV set anyway. I will revive the thread if anything is insurmountable.
