This is for the problem of Plex not fully assigning tv series metadata. You should always have series and movies go into separate libraries as the scanners and agents are separate for those different media types.

This is normal behaviour for DVR recordings. The metadata comes from the EPG source and not the regular movie/TV metadata agents. When you run a Fix Match, it forces it to overwrite the EPG metadata with the data from the regular agents.
This is done because the data from the EPG provider will likely be different to that from online sources like TVDB, TMDB, etc. It gets especially tricky when it has to deal with TV episodes as broadcasters may number their episodes in a completely different manner to that of the online metadata sources which will lead to bad matches.
