I am new to Sysnology, I just purchased the DS-920+.
I installed the PMS beta version and in Plex there is an update version to 1.28, which it says it has to be done manually.
If I update it manually, there are going to be 2 versions, the beta version and the update version which is not a beta.
Will the new version have all my libraries?
I am not a Linux user.
How do I get rid of the beta version in sysnology?

First, and not to be the spelling police, but it’s spelled Synology. I mention this because you consistently misspelled it as Sysnology 3 times. Think of it this way, you’re future Google searches will work better with the correct spelling.
Another bit of information that might be useful would be the version of DSM you are running on your Synology. You can get this by going to Control Panel > Info Center > DSM Version.
I would think that if you are on a beta version and attempt to install an update it would either work, upgrading you to that new version, or fail indicating that this update doesn’t apply but leaving the currently installed PMS alone.
Worse case you should be able to uninstall whatever PMS you have installed through the Package Center (I’m assuming you’ve installed PMS using the Package Center and you’re not running PMS as a Docker container). This will uninstall the PMS app but leave the Plex Database and all your libraries intact. And the new install/update of PMS should see all of that once it gets installed and is started.
And yes the general way to install new versions of PMS though the Package Center is to first stop PMS, then click on Manual Install, browse to the downloaded update file and follow the prompts to manually install the new version.

Regarding installing the current version of Plex Media Server:
You can install the current version without uninstalling the beta version. The current version will replace the beta version. Your libraries will be preserved. You will not have to re-create them.
To perform a manual installation, download the updated software to your PC/Mac. Then login to the DS920+, launch Package Center, and click the Manual Install button. You will then be prompted to select the file you just downloaded. Follow the prompts from there.
When you install the current version, it will create a new shared folder, PlexMediaServer. This folder is exclusively for use by Plex Media Server. It holds the database, downloaded metadata, and other information used by Plex Media Server. Do not place any of your own media files in the PlexMediaServer shared folder or any of its subfolders.
