The version in Synology Package Center, 1.21.0-3744, is a beta release. Unfortunately, Synology will not update or remove it.
There are several changes between that beta and current versions. It is not possible to seamlessly roll back. The largest change is that the -3744 beta keeps the Plex Data Folder in a different, hidden location. It is unaware of the PlexMeidaServer shared folder, which was added in later releases. If you happened to install & claim the -3744 beta over a current release you will not see your libraries, etc.

Yes. Use the downloaded version + manual installation. You will then see the option to use the Plex Claim Token during installation.
FYI, the same “uninstall keep/reinstall claim” process is used for DSM7 systems in FAQ 22 - When server and device credentials are out of sync. FAQ 22 was updated yesterday with screenshots that are not listed in FAQ 15.
