Frustrating since this thing used to work flawlessly. My plex no longer seems to have all my music, photos, and home movies indexed. I added each of their paths as a library and press scan library, but no thumbnails or files are populated.
I’ll keep researching since this seems a common issue, but what am I doing wrong? Once it’s installed on my NAS shouldn’t it auto-discover all the relevant media files?

Sounds like you might have a permission issue.
PMS is running under a specific system/functional user on your NAS. That user needs access to your media in order for Plex to see / catalogue your files.
What version of DSM do you have installed on that Synology NAS?
That’ll define which user you need to give access (and where to do it).
Can you confirm you’ve applied permissions to the system user PlexMediaServer? Not only to the top-level folders but recursively to all subfolders and files?
you are showing local users in that drop down. switch it to internal users. Then you need to apply those permissions to all subfolders which will be a box you can tick.
also access this through file station not the shared folders tab in control panel (which i believe is what your screenshot is showing). I dont think the box for apply to subfolders is present when looking at permissions from the shared folders tab in control panel if i recall correctly.
Do not alter permissions for the PlexMediaServer shared folder. Doing so will impact correct operations of Plex Media Server.

On DSM 7 based NAS, the Plex shared folder and Plex user are no longer used by Plex Media Server. They can be deleted or used for other purposes.
Regarding file permissions, the system internal user PlexMediaServer needs at least read only access (read-write if you are using DVR, optimized versions, etc.). For additional information see FAQ 29 - DSM 7 - Give PlexMediaServer access to your media. As @djfriday13 mentions, be sure to check the box to “apply to this folder, sub-folders, & files.”
I’m one step closer. Went back in. Tried to adjsut permissions from File Explorer but didn’t see options so went to the Shared Folders view. Changed the dropdown to System Internal Users and gave Read access to PlexMediaServer.
I then went back to the Plex app, chose Other Videos (folder with home movies), 3 dots then chose Scan Library and it started populating the files in the View. Still waiting for it to create thumbnails though, but I’m assuming that is slow.
Oddly, I did the same thing for the Photos and Music folders, but Scan Library returns immediately that it can’t find any (attached). Not sure what I’m doing wrong.
create a “media” folder as a shared folder. then create within that your music tv movies etc. libraries. Synology uses those default “music” shared folders for their own internal apps. like photo station etc.
it often causes issues with plex. Then regive pms permissions and you should see the apply to sub folders button in file station because it is a shared folder you created and not one that synology had created for its own internal apps.
that will solve your problem. obviously you need to point plex to where your new library is as well and remove the old library path.
